Easy lactation cookie recipe

If you’re experiencing a decrease in your breastmilk supply, then a batch of lactation cookies may be just the thing to get you back on track. They’re delicious, easy to make and packed full of goodness.

They also make a great gift for a breastfeeding mama, and taste delicious with a cup of tea or a glass of milk.

INGREDIENTS (makes 15)

1/2 cup butter
3/4 cup raw or brown sugar
1 egg
1 tsp vanilla extract
2 tablespoons flaxseed meal
1 cup self-raising wholemeal flour
1 tsp cinnamon
1-2 tbsp brewer’s yeast
1/2 tsp salt
1 1/2 cups rolled oats

METHOD

1 Preheat the oven to 170oC. Lightly grease and line a baking tray.

2 In a large mixing bowl, cream the butter and sugar, then add the egg and vanilla. Mix well.

3 In a small bowl, mix the flaxseed with two tablespoons of water. Leave to sit for a few minutes then add to butter and sugar mixture.

4 Add the flour, cinnamon, brewer’s yeast and salt and stir to combine. Next, stir in the oats.

5 Roll the cookie mixture into small balls. Place the biscuits onto a lightly greased or lined baking tray. Flatten them slightly and bake for around 10-12 mins.
