Dietician Susie Burrell: Brain food for kids!

Top dietician Susie Burrell shares her advice on cooking with kids.

Leading dietitian Susie Burrell says that children who get involved in the kitchen are increasingly engaged about making healthier decisions.

Says Susie: “When kids are actively involved in something and given responsibility, they’re far more likely to stay interested and excited.”

“Parents attitudes towards food and cooking can also play a big role. Encouraging them and showing them how fun cooking can help build their enjoyment and curiosity.”

Susie adds: “When making food together try to explain the benefit of each ingredient, why it’s healthy and how it helps them i.e. this will give you the energy to play with the ball outside or help give them brain food for their test tomorrow.”

Peanut Butter Pancakes


Time: 5-8 minutes | 2 serves

Gluten Free / Vegetarian / Sugar Free

 

Ingredients

1 large ripe banana, mashed

2 tbsp Mayver’s Dark Roasted Peanut Butter

2 extra large free range eggs

1/4 tsp cinnamon (optional)

 

Method

  1. In a mixing bowl, combine the mashed banana, eggs and Mayver’s Dark Roasted peanut butter. Mix well to combine.
  2. Heat a small amount of oil in a frying pan. Spoon mixture onto pan into small pancake shapes. Cook for approximately 2 minutes on both sides, or until cooked through.

 

Tips:

  • To make monkey pancakes like the image, cook different sizes of pancakes to assemble your monkey face. Use 1/4 banana cut into rounds, peanut butter and organic dried fruit to decorate.
