Traditional Australian damper bread is super simple to make and tastes amazing. Best of all, it only requires a few ingredients and is a great treat to whip up with the kids for afternoon tea.
INGREDIENTS
450g (3 cups) self-raising flour
pinch of salt
80g butter, cubed
METHOD
1 Preheat oven to 190°C. Lightly grease and line a tray with baking paper. Place the flour and salt in a large bowl. Using your fingertips, rub the butter into the flour until it resembles fine breadcrumbs.
2 Add 185ml (3/4 cup) water to the flour and use a round-bladed knife to mix until the dough is soft, but not sticky.
3 Turn the dough onto a lightly floured surface and knead gently for 1-2 minutes or until smooth. Flatten into a 17cm disc and place on tray. Use a knife that has been dipped in flour to mark 8 wedges on top.
4 Dust the damper with flour and bake in oven for 30 mins or until golden brown. Transfer to a wire rack and leave to cool for 5 mins.
