Pita bread makes the perfect cheat’s pizza base for weeknight evenings when there’s no time to make your own dough.
Olive oil spray
1/3 cup passata
¾ cup grated mozzarella
100 g thinly sliced leg ham, roughly torn
¼ fresh pineapple, skin and core removed, cut into chunks
Preheat oven to 200C.
Place the pita breads on two baking trays. Lightly spray the pita breads with oil and spread over the tomato passata, leaving a ½-1cm border at the edge. Top with half of the cheese, then the ham and pineapple. Sprinkle over the remaining cheese
Bake for 10 minutes or until golden and crisp. Serve hot.
