Baked Eggs with Ham and Cheese are an easy and nutritious dinner option. Containing protein from egg and ham, and dairy from the added cheese, my baked eggs can be prepared and ready to serve in under 15 minutes.
50g shaved fat-free ham, chopped coarsely
4 organic eggs
1/2 cup (40g) light cheese, coarsely grated
4 slices wholemeal or multigrain bread
Preheat oven to 180°C
Grease four half-cup (125ml) ovenproof dishes .
Divide the ham evenly and place in dishes.
One at a time, break the eggs into a small bowl, carefully sliding the egg from the bowl over the ham into each dish .
Sprinkle dishes with equal amounts of cheese.
Place dishes on an oven tray, baking uncovered for about 10 minutes, or until yolk is set.
